Eat Cake For Breakfast

I like it quick, I like it easy and I like it simple.

I wish I was a natural in the kitchen but I’m not – I have takeway containers galore in my garbage at the mo. #nojudgement

So when I came across lil Miss’ Rachel I had to get in touch and see if she could help me out. First of all she is a gorgeous human being with an equally gorgeous blog that I could just salivate over for hours (I’m on a roll already talking about garbages and bodily fluids). Sorry guys. Secondly, it’s all very health conscious so you won’t feel like Jaba The Hutt after dinner.

Rachel is over at http://www.rachlmansfield.com so head over take a looksie and eat to your heart’s content. I’ll let Rachel take over now:

Hi There!

I’m Rachel, the oat obsessed food blogger @rachLmansfield.

I have a passion for making delicious recipes (particularly breakfasts and desserts) and “healthifying” them so we can love what we eat and how we feel. If you like oatmeal, chocolate, nut butter and appreciate a good pizza, I think there’s a good chance we will get along.

Today I am here on Liz’s blog to share my Funfetti Overnight Oats recipe.

No regrets, no judgements, no second guesses about adding sprinkles to your breakfast.

We all know mornings can be rough when you are rushing out the door to work or when you have to wear 3 jackets just to go grocery shopping because it’s THAT cold outside (only my Northeast babes can relate to this). Therefore we deserve a little brightness at the start of our day.

My Funfetti Overnight Oats are not made with actual funfetti cake mix but they are seriously delish. We all know that while I have a sweet tooth, I am all about the healthy and wholesome ingredients to fuel our bodies. And while funfetti cake mix may be delicious, it’s not happening on my blog anytime soon. Instead we are combining some of of my favorite ingredients to create these gluten free Funfetti Overnight Oats.

In case you aren’t familiar with overnight oats, they will seriously change your breakfast game. They are easy, delicious and SO versatile to make. All you have to do is throw oatmeal, your milk of choice and chia seeds in your favorite mason jar or tupperware, shake it well and place in the fridge overnight.

The best part of overnight oats are the ENDLESS possibilities. Seriously, I am always thinking of new toppings and combinations to switch things up. A few of my favorite recipes are here.

Okay now back to the Funfetti Overnight Oats…

Ingredients:

3/4 cup of oatmeal
1 cup of vanilla almond milk
1 tablespoon chia seeds
1 scoop of vanilla protein powder
Splash of vanilla extract
Splash of almond extract
Sprinkle of cinnamon
Sprinkle of Rainbow sprinkles

Directions:
Combine all ingredients in a glass jar or tupperware

Place in refrigerator and enjoy the next day

xx, Rach
